Logo Design Brief

I am looking for a logo for a new drive-thru Coffee Shop. I would like the '&' symbol to resemble a tree. I will take designs that say either "Jack & Beans" or "Jack & Beans Espresso", as both would be relevant to the business.
The business is in an established location but has not received as much traffic due to signage. Need something to pop for the vehicle traffic that passes on the highway will see the shop and stop for an on the go drink or snack.
The logo will be proudly displayed on the coffee shop and signage to draw the attention of customers. Looking for something catchy that will stick with the customers.
There is the future possibility for expansion that will bring the same logo to other locations. This is a prominent logo for the business to initially catch customers on a highway that they are frequently driving down.
