Logo Design Brief

We need a logo for a company called "The Butcher's Market" specialized in selling animal meat (especially cows and bulls); we have had a long history in this domain before starting this new company-the father of the founder was also in the industry and the founder has had one of the biggest firms in the country before taking a 5 year break and focusing on other businesses he wanted to grow. We like subtle designs (like a signature butcher holding a meat cleaver and the company name), and we are really open to any good ideas,
We intent to sell our products internationally and we would like to see designs that communicate good quality products, professionalism and good prices
